This little puppy was a big surprise. Dash’s portable fast cold brewery is among the many contestants who use pressure or agitation to speed up the classic, slow, multi-hour process to make a smooth, refreshing cold brewery. I had little confidence that would succeed where others failed.
And yet, here we are: This really weird little device makes a shockingly good 15-minute cold brewery. There are many parts, and it makes only one drink-strong cup. But the results are admirably smooth, low in acidity, and free from the tanic bitterness, which afflicts fastest cold breweries. Basically, you put 8 to 12 ounces of water in the reservoir, fill the small filter basket that falls into the device, then bind an additional tube and a rechargeable vacuum device that makes noise Like a vibrant. The Brew2Go will then create a vacuum to siphon coffee and release it, again, on principle similar to the Vacone Air Brewer Wired received positively a few years ago. You will see this visually, when a liquid sucks the vacuum tube and then released back to the carafe. It’s wild to watch.
If you stick to 8 ounces of water, you can quickly cool the water with an ice from room time to cool and still have about 10 ounces of drinking a cold brewery. The results are a bit turbulent: some coffee fines go through the filter. But if you drink right away, this is not a problem. It is gentle, and quite pleasant – not as subtle or aromatic as the kind that lasts 12 hours, but as well as a most packaged cold brewery.
