
Gluten-free cuisine has Merit bad reputation. This is not because wheat has a monopoly on good taste: whole countries and cultures would disagree. Rather, this cooks too often do things that hopelessly need gluten to be what they are: pancakes and waffles, say, or southern fried chicken. Or, Mr. Help us, pizza.
And so every time I tested gluten dishes among the many Food Kits I have RevisedIt was with some fear – I find myself endlessly chewing tapioca pancake, or break my own heart over a tray of borderline zoodles.

What is a pre-game to say: the gluten-free meals of Hellofresh’s organic food-kit mark was a hell of a beautiful surprise. More than half of Green Chef’s recipes are out of gluten, quality that the brand testifies Heart, full-gortine validation From the Seattle-based gluten-intelligence group, which offers certification for gluten-free ingredients and restaurants.
More about that validation and what it means, a little. But first I will say that between a week of gluten-free meals of a green chef, I didn’t miss the gluten. I didn’t miss it, because besides exchange of gluten-free amino sauce (This is one popular brand) Instead of some soybean, none of the meals or should have had gluten in them.
Rather than making pale imitations of gluten things, the meals of a green chef were dishes that never needed wheat. This could include a buggy and a quinoa grilled chicken bowl with a North African spice, steaks in a red pepper sauce with green peas and rice, or rice cow covered with cabbage and honey ginger shrimp.
Everyone was a fully realized and appetite meal that took between half an hour and an hour for me to prepare after getting a box of ingredients and recipe cards from a green chef in the post. No one felt that an ingredient was missing. This is how a green chef works.

Founded in Boulder, Colorado, Green Chef was once a competitor to Hellofresh (7/10, Wired Review), the German-founded meal-kit mark, which helped establish food kits as a successful business model in dozens of countries. When Hellofresh took out a green chef in 2018, the Food-Kit Titan placed a green chef as its organic alternative: a green chef advertises that all its products and eggs are organic, unless specified otherwise. (The meat is currently the same meat, for the most part, used by Hellofresh’s other brands, mostly higher quality merchandise of hereditary US suppliers and producers.)
